5 Reasons to Run

For a lot of people, running sucks. Even for a lot of runners, running sucks. Yet still, so many people sacrifice sleeping in, physical comfort, and ~~yummy~~ junk food everyday in order to run through the elements at 5am and risk having their knees fall off. Sounds fun, huh? So why do so many of us run and LOVE it? Here are a few reasons:

1. It's Healthy
Duh. Everyone knows running is good for you. It increases cardiovascular health, gives you stronger bones, lowers body fat, increases balance and flexibility, straightens your posture, raises good cholesterol, increases lung function, boosts your immune system, lowers your risk of breast cancer and stroke and can even pull you out of depression related funks. It has also been shown that runners make healthier eating choices during the day without even thinking about it.

2. Alone Time
People are always talking about the benefits of meditation. Sure it helps you to clear and relax your mind but seriously, I can't sit alone on my bedroom floor trying to think or not think about things (not that my dogs would allow that to happen anyway). My meditation is running. My morning run is my alone time. I don't have to worry about anything except my steps and breath. During that time, I'm not a teacher or a wife or a dog-mom or a daughter, I'm just a runner.

3. Your Thighs Will Look BOOM.

4. Races
Running anything from a 5K to a marathon with a bunch of other people is so much fun. There is a great sense of friendship between everyone at a race, even though everyone is looking to kick each other's butts. It's a huge adrenaline boost to compete against so many people and to hang out with them after the race. Also, there's usually a ton of free swag from sponsors after the race.

5. You Get to Eat and Drink Whatever You Want
If you're running 10 miles a day, you never, ever have to think about how much you eat. Of course, eating healthy food is always a good idea, but runners never have to say no to dessert. You also never have to be "that" girl drinking a vodka-soda (hold the lime, it's extra calories!). So ladies, drink your beer, eat your second helping of pasta and then run your butt off in the morning.

See? Running isn't sucky, so keep it up, all you runners! Now is the time when new year's resolutions start to crumble, so if running, jogging or working out was one of your goals, keep at it and know that there are lots of people doing the exact same thing as you!

Planning for the (Near) Future

After traveling S.E. Asia and floating around Texas for the last 6 months, my husband and I are gearing up for our move back to South Korea. We've loved all the freedom we've had on our break, but are both starting to long for the stability of a daily routine (how boring is that?) We are very excited about having a place of our own with our pups to decorate and design.

Rifle Paper Co.

I consider the kitchen to be the most important room the the house, and I can't wait to set up our new kitchen in Seoul. First project: Recipe cards. I have an overstuffed recipe box here in the States but I thought it would be a great project to create one in Korea full of vegan-modified Korean dishes. I love these recipe cards from Rifle Paper Co. so much that we almost used them as part of the guest gifts in our wedding.

I left all of my knitting supplies in Korea assuming I wouldn't be doing too much knitting while trekking through India (good assumption) and unfortunately ended up losing the whole lot of them. I'm now left with only one pair of circular needles and a ball of yarn. I'm incredibly excited about hitting up all the local yarn shops in Seoul to re-build my knitting basket. I am also ready to add crocheting and needle-point supplies to my basket.

100 Layer Cake

My sister-in-law, Chrissy gave me some adorable stationary for Christmas and I love it so much that I have started scouring the Internet for more. Then it hit me- Why not make my own? Korea is the (un)official "Adorable Stationary Capital of the World" and finding blank cards and rubber stamps would be a breeze there. I made my own postcards last year, but this year I hope to find a way to make my own envelopes from old wallpaper/maps/prints.

Our Etsy Wedding

As you know, my husband and I were recently married back in August of 2011. We planned the entire event from Seoul, only arriving in Texas two weeks before the big day. How does one plan a wedding in Texas from South Korea? Etsy, that's how. I've been using and buying from Etsy for years and I love the handmade and vintage goods there. Naturally, when I needed to plan my wedding on the cheap, that's where I looked first. Etsy made planning my wedding a breeze and I loved that everything I bought was one of a kind and handmade. I got everything from my dress to the decorations from Etsy sellers and I want to take a moment to give a shout out to those sellers whose wonderful products made my special day, well, wonderful.

The dress: I fell in LOVE with this dress from designer Monique Martinez-Sandoval the moment I saw it. Unfortunately, her gorgeous wedding dresses were a bit out of my price range (the dresses are worth every penny, though). I knew it was meant to be when one day, while drooling over the photo yet again, I noticed she had the sample dress used in the picture on sale for next to nothing. I bought it right away, and had it shipped to Seoul. It fit like a glove and needed no alterations.

The rings: That's right. We even bought our wedding rings on Etsy. The rings were made by Italian jeweler Isa Gioielli out of bronze using a lost-wax casting method. The method she used gave the rings unique waves and bumps. She also engraved "Om Mani Padme Hum", the mantra that was also on our engagement rings, on the inside of the rings.

Decorations: Etsy has an overwhelming selection of adorable wedding decorations. I could have gone nuts and blown our entire budget on table decorations alone. Since our summer wedding was half-outdoors in the beautiful, peacock filled gardens of Mayfield Park, we decided to let the flowers, trees, ponds and birds be the main decorations (why pay for it when nature already did it for you?). We bought these adorable tissue paper flowers in teal and off-white and strung them throughout the gardens.

Flowers: I think it's nutso that some people spend thousands of dollars for flowers in their wedding. We made our own centerpieces using mix-matched vases, herbs and citrus fruits. We used sliced lemons and limes to fill the bowl of the vases, cilantro as greenery and bulk ordered the cheapest, local wildflowers from Ben White Florist. My bridesmaids carried small sprigs of fresh flowers and I carried one fresh cut hydrangea stem. Total cost for ALL the flowers and centerpieces $100. boom.

Gifts: Mikey and I also bought our bridesmaids and groomsmen gifts on Etsy. He found these great personalized mustache mugs for his guys (and even a "Mrs. Harris" one for me). They went great with the striped paper straws from Etsy seller Cupcake Social.

My ladies got these adorable eco friendly jute clutches from Jolie and Me. My only regret with these was that I didn't buy one for myself!

DIY: We also had a lot of handmade items and help from our family and friends. My sister made a gorgeous pennant banner from leftover scraps of material.

And perhaps my favorite part of the wedding (aside from my husband) was the incredibly adorable and super intricate cake topper made by my best friend and maid of honor, Marianna. She hand knit a little Mikey and Claire along with 2 of our kids, PIckle and Bella. Amazing!

The After-Party: Since Mayfield Park has resident peacocks roaming the grounds, we decided to throw game bird seed for our exit as a way to say "thanks" for them allowing us to use their home for our wedding. Since we had cupcakes instead of a wedding cake, we filled colorful cupcake liners with the seeds so each person had their own little cup of seeds to pelt us with.

We also snagged mustache and eyeglass photo props from Etsy seller Party Goodies. These made the photo booth photos from the reception so fun.

Guest Gifts: For our guest gifts, we found these adorable kraft paper seed envelopes stamped with little kissing birds. We filled them with cilantro seeds and attached a thank you note, growing instructions and our favorite guacamole recipe for our guests to make once their cilantro grows. The cilantro seeds kept in step with the taco bar from Torchy's Tacos we had at the reception and the cilantro used as greenery in the flowers.

Tips for Planning Your Wedding:

Keep It Simple: Planning a wedding yourself, especially from afar can be intense. Everyone wants the day to be perfect, but accept the flaws, bumps and changes, that will no doubt occur, as a memorable part of the process. Don't get stressed! Remember, it is a big day, but it's not the ONLY day. Your wedding should be treated as one of many special days you and your hubby/wifey will share.
Chill Out With The Wedding Porn: It's great to look at wedding websites (I like Offbeat Bride) to get ideas for your wedding, but be careful about looking at them too much. It's easy to want EVERYTHING you see, and sometimes those sites make your own plans pale in comparison. Those websites highlight incredible weddings with a wide range of budgets and time. Remember to stick to what you like and to your budget.
Buy Only What You Need: It's easy to want too much for your wedding and getting it all can throw your budget out the window in a hurry. Think about your purchases and ask yourself if you REALLY need or want them. I used the 1:1:1 rule. How will I feel about this purchase in one week/ one month/ one year? If you won't remember it next week, spend a minimal amount or don't even bother. If you'll remember it in a month, spend a moderate amount on it. If you'll remember it in a year, splurge. For example: The bridesmaid's dresses were not something I would think about a week later, so I ordered $11 summer dresses from Forever 21. The decorations were important, and something I would care about for a month or so, so I spent a moderate amount on them. The photos were VERY important for me an something I will look at for years to come, so I splurged.
Go Local: Buying local is always a good idea. It cuts down on your wedding's carbon footprint and supports your local economy. It can also mean big saving for you, too. We bought our flowers from local florist, Ben White Florist. They helped me by ordering flowers directly from their supplier in bulk, which saved me a ton. Our cupcake cake was made by a local baker, who delivered it and set it up personally the day of the wedding. Our taco bar was from a local restaurant and we served local beers and vodka. Local vendors tend to take more pride in their product and will go the extra mile to ensure that your order is perfect.
DIY and Use Your Friends! I would have loved to make more for our wedding, but alas, shipping everything from Korea to Austin would have been way too expensive. Fortunately, we have some very crafty friends and family who made lots of decorations for us. Our friend, Davis Ayer did all the photography for the wedding and my grandmother's cousin's mariachi band serenaded us at the reception. And I can't forget all my wonderful friends who woke up early on the big day and spent all morning helping us decorate and set up. I loved having all my friends involved in my wedding. It made everything so special and seem more real.

Our wedding was perfect, and cost around $5,000, including venue rental, food and drinks for 150 people, my dress and a hand-tailored suit for Mikey. The party was a blast and most importantly, almost everything in the ceremony and reception was handmade, done by friends or local. I have so much more I could talk about concerning weddings, but have already said so much so I'll leave a tab at the top of the page and hopefully we can continue the conversation.

Happy 2012, everyone! I hope you all had a wonderful and safe new years eve night and an even better 2011. The past year was a great one for me, filled with travels and a nice little wedding. I'm excited to see what the new year has in store and I wish only the best for all you!

Have you made a resolution for the new year? In the past, I've made grandiose resolutions only to completely forget them a few weeks later. For me, the key to keeping my resolution is to find something small I can change that has a big impact. This year, I am making my house a napkin and paper towel-free zone. By using homemade cloth napkins and towels I'll be able to save money and reduce my paper waste. It's also a good way to get crafty (personal monogrammed napkins for dinner guests, perhaps?) It's simple and small, but makes a big difference. What's your new years resolution?

Traveling through India, Thailand, Singapore and Malaysia

My apologies (yet again) for the lack of updates and photos over the past few months. This time I have a pretty good excuse for my absence. Mikey and I just finished a 2 month, fast-paced trip through India, Malaysia, Singapore and Thailand.

Our first stop was Thailand, where we spent a few weeks tearing up Bangkok, Krabi and Phuket before taking a break to lounge on the beaches of Koh Samui and Koh Phi Phi.

Next, we moved on to India where we spent 3 weeks traveling across the country by train from Kolkata (Calcutta) to Jaisalmer. We made stops in Jaipur, Varanasi and Pushkar. India is a tough country to stomach, but filled with some of the most vibrant cultures and people in the world. We camped in the desert on the Pakistani border, made some camel friends and floated down the Ganges.

From there, we moved on to Malaysia where we stayed in Kuala Lumpur. We were impressed by the amount of amazing food here, although unimpressed with the lack of nightlife in our area. We were staying in the Chinatown area which was wonderful for daytime activities. We visited the Petronas Towers and the KL Tower but spent most of our time eating our way around town.

We landed last in Singapore, one of our favorite places. This city-sized country requires their citizens and tourists to follow a long list of rules, including a "no chewing gum" rule. Sounds silly at first, but after visiting and experiencing the pristine streets, clean food stalls and the zero-crime rate, I am totally on board with what Singapore is doing.

While we were in Thailand, we moved to an organic farm where we lived and worked for a month. We got our jobs on the farm through WWOOF, an organization that helps organic farms around the world find workers. In Thailand and India, we utilized the train systems and we highly recommend it! Thai trains are great, but just keep an open mind if traveling on a train in India :) A great website for figuring out trains in India and Thailand as well as lots of other countries is Seat 61. We used it often on our trip.

It's hard to sum up months of travel in a single page, and a picture says a thousand words so take a look at our photos from Thailand, India, Singapore and Malaysia.

Happy Wednesday everyone and welcome to the new and improved Kimchi Tacos! I have been working my tail off for the past few days getting this new blog up and running (it takes awhile when you have no idea what you are doing). The old Tumblr blog just didn't allow much wiggle room when it came to design so I made the switch to Blogger. I can guarantee my previous blog issues were user related (no hard feelings, Tumblr). Mikey and I have been hopping around SE Asia for the past few months and just last week arrived in Texas as a surprise Christmas gift to our parents. Needless to say, we've been busy and haven't had much time to update blogs or Flickr. We have lots to say and show and will get on the ball very soon. Anyway, I hope to see you here often and as always I look forward to your comments and suggestions!

Wolfhound Pub

I recently had lunch at Wolfhound Pub in Itaewon. I had been there before and their veggie burger was delicious enough that it warranted a second visit. The scene is very "Itaewon-y" with lots of people drinking with passion and the occasional bar fight (on my last visit some guy almost took his pants off). If you are going just for the food, I recommend going before 2 or 3pm. It's seems like that crowd sleeps a little late on the weekends, allowing for a window of quiet normalcy in which I enjoyed my lunch and played some darts and board games.

The red bean and chickpea veggie burger was crunchy on the outside and super yummy

The curry chips were my favorite part of the meal. Crispy home fries topped with English style curry.

Buddha's Belly

After spending my Christmas vacation in Thailand, I have been on the lookout for authentic Thai food in Seoul. This was not my first visit to Buddha's Belly and I must admit, I was not too impressed with my first couple of visits. I found that their veg options lacked diversity and most tofu dishes ended up being a plate of sliced tofu covered with curry on white rice. This time however, I decided to visit Buddha's Belly Take Away in Haebangcheon rather than the larger location in Itaewon. This location is MUCH smaller (maybe only 10 people could fit inside) and they offer a smaller menu than the larger location. However, I enjoyed this visit much more than my previous ones.

Some menu items were the same in both locations, like their vegetable spring rolls. These are awesome every time.

The green curry with vegetables and tofu was great. This curry was much different than the tofu dishes I had at the Itaewon location and had lots of veggies (some I had never even seen or eaten before). While still not on par with the real deal in Thailand (not that I really expect it to be), Buddha's Belly in Haebangchon is a pretty good place to get a Thai food fix.

Happy Store

Just as the name suggests, this foreign food store makes me incredibly happy. The first time I ever visited Happy Store in Haebangchon I was delighted to not only find frozen Morningstar products but also Shiner beers! For many of you, this may mean nothing, but Shiner is a beer that is brewed in Texas. At home I am not a huge fan of Shiner (I think only because Austin is full of local microbrews that make Shiner taste like cheap beer) but in Korea it's a great change from Cass and Hite. They also have a huge selection of other awesome beers and lots of foods from the homeland.

Located in Haebangchon, just up the hill from Beer O' Clock pizza, this place has easily become my favorite foreign food stores in Seoul.

Check out all this veggie goodness! After requesting Grillers and Chick-un patties, the store owner started keeping his freezer stocked with lots of different Morningstar products. He is so nice and has no problem making special orders. Most orders come within the next week.

Bao

Located right at the bottom of the hill in Kyeongnidan is Bao, a tiny stir fry restaurant. I must have walked past this place a million times and never paid attention to it until I saw a sign reading "Vegetarian food!" outside. Although very small (in similar fashion to many restaurants and cafes in the area) Bao has an interesting and relaxing atmosphere.

Bao allows you to create your own dish by offering 3 types of noodles, brown rice and white Korean rice. They have lots of different sauces to choose from including Thai, Malay and Korean. After you pick you sauce and starch, you can choose from a large selection of veggies to add to your dish. The portion size is big and the dishes start at 7,000W. Adding tofu costs 2,000W and you can even add extra spices like lemongrass and Thai basil. This time, I went for the thin rice noodles with Thai sauce and tofu.

The food was so good that I ended up going back later that night with friends for dinner and had the wide rice noodles with Malay sauce and tofu. They also have a "Bao-jito" which is like a mojito but with lemongrass infused vodka. I asked for mine without sugar and it tasted like Thailand over ice.

To get there, head towards Haebongcheon from Noksapyeong station and you'll see Bao next door to Noxa on the corner. You can call them at 02 797 4769. The address is 658, Itaewon-dong (Kyeongnidan), Yongsan-gu, Seoul 140-861

Petra Palace

I think this place needs no introduction. Most Seoulites (Seoulins? Seoulidians?) know Petra Palace in Itaewon and love it hard. It is the best falafel I have had in Korea and it has legit hummus, tabouli and baba ganoush. The falafel here is something I crave on a weekly basis and I will go out of my way to grab a bowl of hummus to take home to put on bagels, bread, veggies, crackers, tacos, my face, Mitch and anything else I can find.

The hummus comes topped with chopped garlic and olive oil. SO GOOD

I got so excited about eating my falafel that I forgot to take a picture of it before I started eating. You can get a "falafel set" with a drink (mango juice!) and french fries for 9,000W. Hummus, tabouli and baba ganoush run around 5,000W with a giant piece of flat bread for only 1,000W.
To get to Petra Palace, get off at Itaewon Station, exit 2. Walk straight for about 2 minutes and it will be on your left next to Frypan. 552 Itaewon-Dong, Yongsan-Gu, Seoul. The original location is up the hill, closer to Noksapyeong Station.

Anapurna

It is long overdue that I talk about this restaurant. Most really good restaurants lie within the city limits of Seoul. Bucheon has fantastic Korean food, but most cuisine from other cultures is lackluster and just plain bad in most cases. Not Annapurna. This gem of an Indian restaurant is conveniently located within walking distance of Bucheon Station and across the street from my favorite thrift store (shopping and curry make for a pretty great evening).

First things first: pagodas. These are fried balls of chickpeas, onions and yellow curry. It's kind of like hash browns cakes, sans potato, add more awesome.

Next up, lentils! One of the things I miss from home is lentils. You can get big bags of them at the foreign food markets in Seoul, but the idea of carrying a bag of lentils on the subway or bus for an hour is enough to keep me from buying them. The dal fry here is awesome and full of spicy red and green peppers.

The navaratan curry is my second favorite dish here. It has tons of peas, carrots, green beans, potatoes and onions and it topped with coconut milk.

The best part: Annapurna's nan, covered in a ridiculous amount of garlic. This is probably the main reason I enjoy this place so much. Annapurna also has Strongbow Cider in bottles for around 4,000W. Each curry is around 5,000W and a plate of pagodas is 6,000W. Not bad, considering the huge portion sizes. It's important to take lots of friends and share.
To get to Annapurna, walk straight out of the front of Bucheon Station (the Lotteria side). Walk 2 blocks and take a right. Take your next left and you will see Annapurna on your right on the second floor. They speak English, so if you need help with directions, just give them a call.

Casablanca

Hey HBC! Have you been to the awesome new sandwich place in your hood? Casablanca is a Moroccan sandwich shop just a hop up the hill from Orange Tree in Haebangchon.

Their sandwiches are huge and come served on crunchy, chewy good bread (which is pretty hard to find in Korea). Their veggie sandwich has curried potatoes, olives, yogurt, lentils, chickpeas and lots of spicy grilled veggies.

Always in pursuit of good lentils, I was delighted to see lentil soup on the menu! The soup is mega-flavorful and tastes like it has cinnamon in it. That may sound strange, but its an awesome and unique combination.

The owners are incredibly nice and welcoming. They cook everything in your sandwich right when you order it, so it takes a bit to get your food. Don't let that turn you away, though. Its well worth the wait.

And did I mention the best part? All the sandwiches are under 5,000W and the lentil soup is only 2,000W. I am always so happy to find places in Seoul who serve awesome foreign food and don't charge an obscene amount for it, just because they know they can. I would easily pay more for this food.

To get there, take Noksapyeong Station exit 2 and walk straight until you see the kimchi pots on your left. Take a left there and walk up the hill about a minute or two. You will see Casablanca on your left.

Vegan in Cowtown

This semester the University of North Texas will be introducing something new and awesome in their school cafeteria.
UNT is located in Denton, Texas, just a hop away from Ft. Worth Texas, which is commonly referred to as "cowtown" because of the stockyards, or livestock markets, that made the area the livestock center of Texas. Not exactly the kind of place you would expect to find an all vegan lunchroom, but Mean Greens on the UNT campus is giving vegans and vegetarians new and yummy food options.

UNT has said that they are not trying to convert students to veganism but instead are trying to broaden students eating styles while giving everyone healthy eating options. The school will still keep their southern comfort food cafeteria open which includes options such as fried chicken and chicken friend steak, but hopes that all students, veg or not, will incorporate the Mean Greens menu into their diet.

No more salads and hummus sandwiches, students! The Mean Greens menu has everything from vegan paninis and pizza to sushi, moussaka, vegetable wellington and vegan McMuffins for breakfast. The school even makes flexible and affordable meal plans for students who don't live on campus so all students can get their healthy fill of food anytime. Hats off to you, UNT!

Spiral Diner

If you're vegetarian and living in the Dallas/Ft. Worth area, I'm sure you have spent many a lunch at Spiral Diner. Dallas is pretty limited when it comes to veg restaurants, with only a handful of them being completely vegan. Of these, many of them are Asian cuisine (not that I don't love the phở out of Asian food, but sometimes I just want a sammich and some potato salad). Spiral Diner has a big menu with veggie burgers, wraps, salads and southern style plates.

Spiral Diner uses organic and fair trade coffee and teas and serves all natural sodas sweetened with agave nectar on tap!

This visit, Mikey got the Spiral Burger made with the nut burger patty, vegan cheese and avocado. I had the Cowboy Burger with a regular patty, vegan chipotle mayo, guacamole and jalapenos. I had the potato salad as my side, which was quite possibly the best I've ever had.

You don't have to be vegan to love this food! I dare anybody, omnivore or herbivore, to tell me this veggie burger isn't delicious.

And what's a dinner (or lunch, or breakfast) without dessert? Spiral Diner has a bakery case full or cupcakes, pies, cookies and cakes. Their red velvet cake and lemon cupcakes looked fantastic and were oh so tempting.

Mikey and I decided on the "Martha the Librarian" milkshake - bananas, strawberries, vegan chocolate ice cream and peanut butter blended up into shake so good you'll cry.
Entrees run around $8 and appetizers start at under $2, so you can be broke and still get a healthy, yummy meal. You can even start your Sunday with brunch (my favorite). Both locations also have small grocery sections where you can stock up on vegan goods. They even carry Evolution vegan dog and cat food (in my opinion, the best vegan pet food you can buy). Spiral Diner has two locations: Oak Cliff (1101 North Beckley Avenue, Dallas, TX 75208) and Ft. Worth (1314 W Magnolia Ave, Fort Worth, Texas 76104-4340). Hello and welcome! My name is Claire. I am originally from Austin, Texas (tacos) but have been living in Seoul, South Korea (kimchi) for a couple of years. Kimchi Tacos follows my travels, adventures and food finds around the globe.

I am an English teacher at a hagwon (private English language institute) in Seoul and I also love knitting, taking photos, baking and gardening. I'm a runner with a marathon in mind (someday) and I love yoga. I'm also vegan and a tad obsessed with animals.

I am married to a wonderful human being, Mikey. We were married on August, 13 2011 in Austin. Shindig, his monthly dance party in Seoul, is the bee's knees. He and I recently returned from an extended trip to India, Malaysia and Singapore and were previously living and working on an organic farm in Thailand.

We have two lovely children, Isabella and Ralf
